This Little Goat Moroccan Chicken Salad Lettuce Cups

Fellow Chicagoan Stephanie Izard’s new line of globally-inspired sauces and spices, This Little Goat, made for perfect lettuce cups with Gotham Greens Butterhead Lettuce. This collaborative recipe celebrates local food with two of Chicago’s own: This Little Goat and Gotham Greens.

2 cups shredded chicken breast
½ cup diced celery
¼ cup sliced almonds
¼ cup golden raisins
¼ cup scallions, thinly sliced
¼ cup flat-leaf parsley, chopped, plus more for garnish
¼ cup plain Greek yogurt
2 Tbsp mayonnaise
1 Tbsp fresh lemon juice
3 tsp This Little Goat went to Morocco spice
Salt and freshly ground black pepper, to taste
Gotham Greens Butterhead Lettuce


  1. In a large bowl, combine the chicken, celery, almonds, raisins, scallions and parsley.
  2. In a small bowl, whisk together the Greek yogurt, mayonnaise, lemon juice and This Little Goat went to Morocco spice blend. Add to the chicken mixture and mix gently to combine. Season to taste with salt and pepper and refrigerate until ready to serve.
  3. Serve on crisp Gotham Greens Butterhead Lettuce cups, topped with chopped parsley.
