Greens for All Seasons with Meal Prep Chef

Words by

Winter is coming, but that doesn’t mean we have to stop enjoying fresh, locally grown greens through the cold months.

Thanks to our climate-controlled greenhouses, Gotham Greens is always in season. To take advantage of the last moments of rooftop season, we hosted a rooftop dinner with Alyssa Gagarin and Nicole Bassis of Meal Prep Chef.

Garam Masala Lettuce Wraps Recipe:

Ingredients

1 Can Chickpeas
1 T dry harissa
2 t Za’Atar Spice
1 shallot, minced
olive oil
salt & pepper
1 shallot, thin sliced
1/4 C red wine vinegar
1-2 radishes, thin sliced on mandolin
Gotham Grens Butterhead Lettuce
Gotham Greens Green Goddess Dressing

Directions

Saute drained chickpeas in a pan with olive oil + minced shallot, add in harissa and za’atar and continue to cook for 3-4 minutes, season with salt and pepper. Add 1/4 cup of water and cook down for another 3-4 minutes.

While chickpeas are cooking, marinate thin sliced shallot with red wine vinegar, 1/4 cup water and 1 teaspoon za’atar spice.

Assemble by placing a spoonful of spice chickpeas into lettuce cup, topping with some slices of pickled shallot, a couple radish coins and drizzling with Gotham Greens Green Goddess Dressing.

Here’s to filling up on leafy greens 365 days a year.
